The Best Breakfast Quinoa Bowl
Is there anything better than starting your day with a big, delicious quinoa breakfast bowl? Whether you’re a sweet or savoury person, quinoa bowls are so versatile and customizable that you can whip up whatever you’re craving in no time. My tip for you is to make a big batch of quinoa that will serve you for the week (leave it plain if you intend to mix it up during the week)
Ingredients
1-2 cups of quinoa (depending how big of a batch you are prepping)
2-4 cups of water (according to your amount of quinoa)
1 can full fat coconut milk
1 egg
1 tbsp butter
vanilla bean (whole bean or powder)
cinnamon (to taste, I like a lot)
awaken blend (eversio wellness, available at Whole Health)
hemp hearts
apple (or fruit as desired)
honey
cacao nibs
Instructions
Pre-heat oven to 350 degrees
Cook your quinoa according to package directions until fluffy
Add your vanilla bean (or powder) as your quinoa is simmering
Add coconut milk, egg and butter to a small bowl and mix
Add coconut milk, egg and butter mix to quinoa and stir until fully combined
Pour into a medium casserole dish and bake 20-30 min
Remove from oven and scoop desired amount into bowl & top with your favourites
I’ve been loving adding the following to my steaming hot quinoa bowl; more milk (almond, or or coconut), more cinnamon, awaken blend, hemp hearts and cacao nibs for a little crunch, I’ve also be alternating between banana slices and crispy fresh chopped up apple, and I’ve been drizzling my homemade fermented garlic honey on top (trust me, you don’t taste the garlic)
